How much is Bison meat per pound in Alberta?

That all depends on the cut of meat.  

Ground Bison from $9 - $12 / lb.  

Lower end cuts of steaks and roasts (Chuck, Round, Sirloin, etc) $14 - $23 / lb.  

Higher end steaks and roasts (Ribeye, Striploin, Tenderloin) $25 - $40 / lb.

Why is Bison Meat More Expensive Than Beef

Bison meat is generally more expensive than beef, and there are several reasons for this. One key factor is its scarcity; annually, only about 20,000 bison are slaughtered compared to the 125,000 cattle processed daily. Additionally, the methods used to raise bison often involve sustainable and free-range practices, which are typically more costly than the intensive, confined approaches used in large-scale beef production. This variation in farming techniques not only affects the quality and outcome but also significantly increases the cost per animal.

Bison or Buffalo? What is the difference?

Bison and buffalo are often confused but are distinct species. Bison, found in North America and Europe, have shaggy coats and large shoulder humps. Buffalo, native to Africa and Asia, lack these humps and have different horn shapes. The mix-up began when early American settlers incorrectly named bison as buffalo.
